I suggest in future you keep data for 6 months maybe more, just do a monthly backup to a usb or something if you don't want it on your pc.
We prob get at least one person per month coming from ages ago asking where their product is.

£7!!!! that is disgracefull, something should be done about that
It reminds me of the banks who charge excessive late and overdrawn fees for basically sending a letter out, you can get this money back if you threathen them with court as they are not allowed to make profit on these transactions but who could be bothered doing this for £7

I would be skeptical too.
Are you a powerseller? If so, give them a ring and speak to someone - I think the support over the phone has improved in the last 12 months. I contacted them a few days ago and they logged notes against the call and he gave me his name in case I needed to speak to him again. I think the buyer can no longer leave feedback if you file an unpaid item dispute and they do not pay/respond.
I would write politely back to the customer re-iterating that it was stated in the description that payment was to be made within xx days (though at this point try not to rub them up the wrong way by saying things like "as clearly stated" and "you should read the payment terms before buying" etc). As you hadn't heard from them within this period, you raised a cancellation request as it was assumed they were no longer interested in the product as from previous experience no contact within the given timeframe more often than not results in non-payment hence why you state this in the description. Say you are sorry if this was an inconvenience and you will of course honour the transaction. However you would appreciate if they could please confirm that they wish to proceed with the transaction and if they could please let you know within 48 hours.
If they respond saying yes then ask them when they will be able to make payment and complete the transaction (perhaps throw in free P&P or something as a sweetner for positive feedback).
If they say no then tell them to you have been charged by ebay for a successful sale and they need to agree to a request for cancellation in order for your fees to be refunded and that you will send a request through for them.
If they refuse this or do not reply, raise and unpaid item dispute without any further ado.
Try not to get worked up about it - there are some very irrational/unpredictable people out there and unfortunately you will cross paths with them every once in a while.

i normally just get in touch with non payers by phone first all you have to do is press advanced search and it give's you an option to get the buyers contact details. enter the user id and item number and submit. email is automatically sent out in seconds then pick up the phone. it will shock some people sometimes into paying. for example one woman i spoke to stated she thought she had paid when she pressed buy it now. (with 189 feedback?? i find it hard to believe someone with that much experience of ebay could make a mistake)
if for example with the original problem had you kept a print out of your cards you could have rang them and read out the code to them as they entered it on there xbox and then asked for positive feedback which stops them being able to make a paypal claim at all

Do what I do now and send everything Recorded Delivery, unless they have dodgy post person who just shoves parcel through door without a signature they cannot state they don't have the item. I had this when I sold shed load of MJ dvd's at the end of June, woman 3 weeks later said she had not received item, luckily for me I sent everything out recorded and traced item, which had been signed by her. The cheek of some people.

Might not have been her that signed, could have been the Postie stealing
I was talking to the Courier drive the other day and he was saying he lost out on a couple of hundred quid about a year ago when he did not receive an item and lost the dispute because the buyer had a tracking number which proved it was delivered, turned out about 6 months later, his postie got done for stealing thousands of pounds worth of post over a long period of time which included his recorded item. This posties apparently lived in the same area he was stealing from and knew alot of the people he was stealing from, what an idiot, got put away from 18 months if i remember correctly.

Unfortunately all too commonplace, regardless of what trade there are and always will be some corrupt ones, just goes to show that we can't put 100% faith in anyone, which really is a sad situation.
