so when the national runs people only choose one horse?.... I think not
you have a choice to back the horse and you have a choice not to back the horse..... how many choses are possible.... you may choose one or the other
choice
1.an act or instance of choosing; selection:
The saying "I have no choice" is a misconception and tends to mean there is only one logical choice to make given the options and or circumstances
its as misleading as "to boldly go"

it's like this
When I go to a restaurant I make a choice and choose what I will order
if I order my dinner and I'm asked if I want chips or new potatoes I make another choice
if I am also asked how I want my steak cooked I've made three choices
if I'm also asked if I want peppercorn sauce I've made four choices.
So if I choose steak with chips and peppercorn sauce I have made four choices altogether
simple.

actually you could make the choice not to have chips or potatoes which is another option to choose from
but lets be honest we are not talking strictly about choses we are talking about options... you dont make a choice until AFTER you make up your mind so there is only ever one choice.
the catch here is this...... they are ALL options BEFORE you make up your mind.... they only become choices AFTER you have made up your mind..... its a before and after thing

Yeh, but you would most likely be hungry if you didnt have any potatoes.
With regard to the Grand National example:
By picking 2 horses you will have made a practical selection twice, thus you have made 2 choices.
Petes example was :
"You have 1 choice either to buy from them or not." It was then pointed out that it was 2 choices. This is not the case- only 1 choice is possible

in your response you have pointed out that they are only choices after you have made your selection [which is what I stated above] before you make the selections they are not choices they are options to choose from..... as I have suggested.... it is a time line thing..... before you make your decision they are options to choose from.... not choices..... they only become choices after you have decided..... given your comment above re horses....... before you make the practical selection you have options not choices... ie... select no horse... select one horse... select 2 horses... etc.... what you decide to do is the choice you have made
