My new home is in an old quarry, set into the side of a hill. No tv signal. So it came with a Sky dish and box which I use on Freeview. There is a connection for a telephone socket which at the moment I don't use. My ignorant question is this: If I plug it into the phone socket, what will I get that I don't without the phone connection?

Nothing really. It's for ordering pay-per-views, using interactive services and making call backs to Sky.

They have it in the T&C's if you subscribe to Sky that you need to connect the box to a phoneline - that's one of the conditions for getting the box at a reduced price.

I think there's an option with a standard Sky box where you can pay £25 or so for the priviledge of not connecting your box to a phoneline.

I never have mine connected, although I got stung when they took out 2 years worth of pay-per-views when I left it in one night. I thought the cash was just coming out each time I ordered them that month. Turns out that they only see them when they check through the phone at 12 at night. So where I left it in, they saw loads and took it all and then I had to pay bank fee for being to overdrawn. I was PISSED!
